You buy the animal finished to your liking.  All are grass-fed, but some are finished on grass and others are grass-raised and grain-finished (3 months).  Have your animal custom processed to your specifications by and artisian butcher- pay processor direcly.  If you don't have a butcher we can help you arrange a kill date with one that we recommend and help order the custom cuts you can't buy any other way. Sales are based on a hanging carcuss weight of 375 lbs, and yield about 245 lbs of boneless trimmed meat.
